1. Season the rack of St. Louis spare ribs with 16-mesh black pepper and Hill Country rub.
2. Prepare a grill with post oak or Jealous Devil charcoal and heat to 275–300°F.
3. Place ribs directly over the heat.
4. Mix water, chopped onion, butter, white vinegar, Worcestershire, dry mustard, salt, pepper, and a dash of hot sauce to create a mop sauce.
